GIRAPOGGIO Cabernet DOC
In our keen quest for maximum grape concentration we have always
choosen the most poor and sunny calcareous soils for our Cabernet
grapes, both Franc and Sauvignon. We have found them in the steep
sides of the hills outside Arquá Petrarca.
Contrary to the usual practice of planting perpendicularly from
bottom to top, we have let the vines follow the wavy perimeter
of the hill. This way of planting is called "girapoggio"
(that is: "around the hilltop") and its shape exploits
at the most the hours of sun in the high part of the hill.
Each of the fifteen thousand vines yield not more that one kilo
of grapes. The resulting wine matures for two years in 500 litres
casks, half of which are new.
